Zucchini Soup
My next concoction to use up the massive amounts of zucchini our garden produced (after sharing some of the goods with a friend) was to make a zucchini cheddar soup. Sauteed zucchini, onion and garlic with some Italian seasoning before adding water to boil and blending with my immersion blender to make it creamy. Final touch was some shredded cheese and voila! Trying to come up with art projects for our homeschooling adventure has proven to be one of the easiest things to do and the most fun. Having grown a huge harvest of tomatoes I have run out of ideas to use for them. My latest recipe was for a tomato soup which included green peppers (also home grown), onion and garlic topped with cheese which was approved by my kids. We’ve Got a Garden
So excited for the haul our garden this year has been providing us! The kids have been so excited to help harvest while also enjoying some new recipes using the home grown ingredients we’ve been implementing in our diet. First time ever planting Yellow Pear Tomatoes so we only did one this year, but honestly it was probably even more preferred over the traditional cherry tomatoes so definitely investing in more next year.
