My next concoction to use up the massive amounts of zucchini our garden produced (after sharing some of the goods with a friend) was to make a zucchini cheddar soup.
Sauteed zucchini, onion and garlic with some Italian seasoning before adding water to boil and blending with my immersion blender to make it creamy. Final touch was some shredded cheese and voila!
Super EASY!

Needless to say, we’ll be eating like royalty at our house for at least the next few days!
